Red currants

Ribes rubrum (red currant) is a deciduous shrub of the Grossulariaceae family, native to Western Europe. Botanically, it is characterized by palmate lobed leaves without a distinctive aroma and fruits – juicy berries in drooping clusters. Color variability includes classic red, albino white, and transitional pink cultivars. The 'Vīksnes Sarkanās' variety is unique with its exceptionally dark, almost cherry-colored skin. Nutritionally, the fruits are valued for their low energy value and high content of fiber (pectins), vitamins K and C. The phytochemical profile is determined by organic acids (especially citric acid), which are responsible for the acidity. The concentration of anthocyanins (antioxidants) is directly related to pigmentation: while white varieties lack them (containing only phenolic acids), red and pink varieties have a moderate amount, and the dark 'Vīksnes Sarkanās' stands out with the highest proportion.
