Quince Trees

Cydonia oblonga (quince) is a deciduous shrub or small tree of the Rosaceae family, native to Southwest Asia. Botanically, it is characterized by large, single white-pink flowers and entire leaves. The fruit is a hard, fuzzy, intensely fragrant yellow pome that is pear- or apple-shaped, depending on the variety. Nutritionally, the fruits are exceptional in their high fiber content, especially pectins, which have excellent gelling properties. They are a source of vitamin C, copper, and iron. The phytochemical profile is defined by a high concentration of tannins, which cause the raw fruit to be bitter (which is why it is rarely eaten raw). After heat treatment, these substances change, causing the typical reddish color of the products. The peel contains unique essential oils, responsible for the strong aroma.
